Here is the recipe:

3 Cups (127.5g) Romaine
3/4 Cup (105g) :90 Second Brown Rice
1/2 Cup (122g) Reduced Sodium Black Beans
1/2 Cup (125g) Whole Kernel Corn
1/4 Cup (28g) Reduced Fat Mexican Blend Cheese
1/2 Avocado
1/2 Roma Tomato
1/2 Serving (14g) Tortilla Chips
3 Tablespoons (45g) Salsa
2.65 Ounces (75g) Fat Free Plain Greek Yogurt
1 Teaspoon Chili Powder
1/2 Teaspoon Chipotle Pepper
1 Teaspoon Minced Garlic
Couple Squirts Lime Juice
8 Ounces Protein of your choice (I like using Chicken Breast but you can use Tuna, Lean Ground Beef or Turkey, Tofu, etc)

Calories in the WHOLE recipe:

Calories: 1009
Fat: 33g
Saturated Fat: 10g
Sodium: 900mg
Carbs: 94g
Fiber: 20g
Sugar: 14g
Protein: 84g

Calories in each bowl (if you make 2):

Calories: 504
Fat: 16.5g
Saturated Fat: 5g
Sodium: 450mg
Carbs: 47g
Fiber: 10g

Protein: 42g

To make your dressing combine your Greek Yogurt, Chili Powder, Chipotle Pepper, and Minced Garlic together in a small bowl. Mix those ingredients together and put your dressing off to the side. Chop up your Roma Tomato & Avocado. Crush up your Tortilla Chips. Add the rest of your ingredients together in a large bowl and portion out into however many servings you want. Top your serving with some dressing. Mouthgasm!

Tips: Substitute any ingredient you don’t like or don’t have access to! Don’t want it spicy? Don’t add the chili powder or chipotle pepper! Don’t like Greek yogurt? Use sour cream! Use different beans, spices, herbs, and/or flavors or salsa to switch things up when you get bored!

Use your own dressing!

Make some healthy homemade guacamole to top it with!

Wait to put your dressing on until you eat it so that your bowl doesn’t get soggy!

  1. This is definitely just a good ole healthy Taco salad. It's not Chipotle without cilantro. I'd make the cilantro lime rice separately and have/make guac and chips on the side not avocado and chips in the salad.

  2. Do you mind doing a video on sports now pea protein powder/how to make protein low carb protein bars from them since its on sale for like 16 bucks for 2 pounds unflavored? I've tried twice on how to make some quest like protein bars, and once on protein donuts, and have utterly failed. I used only the protein powder, three scoops, coconut flour, unsweetened almond/coconut milk/cashew milk, no dairy, or cream, and some coco powder, cinnamon, and stevia. Also a quarter of a banana, and flax seeds, and if it isn't clear by now it's vegan so no eggs, milk, and what not.

I'm not three Michelin Star celebrity chef Gordon Ramsay, but………isn't this recipe just sexy Beefcake making a big salad?  I don't care.  Beefcake could open a can of dog food for Amigo, and I would watch. I don't think anyone ever looked more adorable in an apron than Derek.   Sigh…………………I want to take a nap on his gigantic arms.  I bet he smells like roasted pumpkins.  I bet Amigo smells like a bag of Fritos.  😀
